    Fermentation schedule

Our target is 4-7 days of primary fermentation, 1-3 days of secondary fermentation under pressure, and 5-7 days of cold conditioning/lagering. Dry-hopped beers sit at least another week.

3-4 days primary, 2 day VDK rest, 6 days maturation (55F), chill, transfer, gas it...total of 14 days. We are not a packaging brewery, just brewpub and the longest a batch will be on tap is 4 weeks. I would expect this to be a typical brewpub process timeframe.
