What products are useful for this? How often should brewery trench drains be cleaned?

Practically, it depends on how often you brew, how dirty you work, whether you have bottle shards, or spent grain, or yeast, or hops going down there (you shouldn't). I use a long-handled, dedicated, cylindrical brush for these. Clean them with a bit of water & dish soap when they're dirty. Don't need to use chemicals, much less sanitize your drains.

I have a pipe at the beginning for my drain, plug into the plc and opening a valve of hot water. Thats it.
